French Toast: The Only Recipe You Need!

This isn't your everyday french toast recipe. It will take your breakfast to a whole new level, all while keeping it healthier so you don't have any guilt for eating it.
  • 2 pieces of bread (ideally Ezekiel, flax, chia or seeded)
  • 2 eggs
  • 1 tablespoon organic no-salt added peanut butter or almond butter
  • ½ banana or 4 strawberries sliced
  • ½ tsp vanilla extract
  • 2 tablespoons unsweetened nut milk
  • 1 cup berries of choice
  1. Heat your non-stick pan with 1 tablespoon coconut oil.
  2. Spread the peanut or almond butter on one side of the bread and add the sliced banana or strawberries. You can pretty much sub any nut butter and any fruit here. Add the second slice on top.
  3. Mix the eggs, almond milk, and vanilla extract until well combined. Carefully dip your sandwich in, holding it as your flip it over so the fruit doesn't fall out. Cover both sides well.
  4. Place in your pan and cook until a light brown crust forms then flip.
  5. Meanwhile, heat your berries in the microwave or stove, then pour over the french toast.
