Avocado Smash on Toast

My loves! It’s been far too long since I’ve posted a recipe. I’ve missed you all so much, did you miss me?

So as most of you know, I’ve been doing the press tour for my first ever book, The 5-Day Real Food Detox, which was just released last week. It’s definitely been the busiest I’ve ever been and the way I look back on the past six weeks is a beautiful blur. I’ll go into a post later this week on everything I did for the book launch, so stay tuned for that. Aside from the book actually launching, there was just so much to get done in terms of social media and press, so my poor blog got put to the side for a minute.

Alas- I’M BACK! And I’m ready to share this delicious healthy avocado smash on toast with you all.

Now, if you’ve been following my Instagram (or snapchat for that matter), you have probably seen that I’ve been a tad obsessed with avocado lately. I’m kind of loving the fact that everyone is now on the FAT bandwagon. No, we’re not talking about bad for you fat. We be talking dem avocados! (Well, there are other healthy fats that are getting lots of press, such as butter, cacao butter, etc.)

Avocados contain more potassium than bananas, they contain oleic acid, which helps to reduce inflammation in the body, they are high in fiber and they help your body to absorb nutrients. Pretty good, huh?!

So  how much avocado(s) should you be eating? Well, it kind of depends on your body type. For someone with my body type, which is longer and leaner naturally, I can get away with higher amounts of fat. This is because I’m naturally colder and the fat helps to insulate. Someone who puts on weight easier should watch their fat intake a little bit closer, although it’s hard to go super overboard with nuts and avocados (we’re focusing on the real food, not oils here). I personally will eat about 1/2 an avocado a day, although this easily becomes 1 full one.

Alright, so onto the recipe. Avocado smash is one of my most favorite things ever. It’s incredibly easy and tastes ridiculously good.

Here’s the ingredients for this:

Avocado, salt, pepper, and bread of your choice. It’s THAT easy. Now if you want to take it up a notch, add some balsamic reduction (you can buy this already done, or make it by adding balsamic vinegar in a pan and cooking it until it reduces on low heat). I used this very delicious spinach bread that I bought from Whole Foods that of course I cannot remember the brand of.

All you do is take your avocado and add it to a bowl, mix with a pinch of salt, a pinch of black pepper and mix. I am not using quantities because it really depends on your taste. I don’t use much salt, but you might like more. Just remember to always start with less and add more after tasting.

Then toast your bread, add the avo mash on top, drizzle the balsamic reduction on top and if you want to really take it up a notch, add sliced tomatoes. I used cherry tomatoes for this because there are slightly more delicate and look prettier than normal ones.

It’s as simple as that! Seriously. I would say take my word for it, but don’t…just try it…you really won’t be disappointed. This is a pretty fool-proof recipe, especially if you don’t know how to cook.

So there you have it. One of the most simple, yet delicious (and healthy) recipes you can make.

Life is about simple pleasures. No need to make something crazy fancy to enjoy it, let’s just take the basic ingredients you know and love and make some magic.

Lots of love,
