Happy Monday everyone!!

Today on the blog: de-LICIOUS Chocolate PB Bites. My mouth is watering as I write this post, all I want to do is keep eating these, but alas I’ll have to settle for looking at pictures until I get the ingredients again.

A couple weeks ago I threw a wrap party for the detox book photoshoot, and of course with my insatiable sweet tooth, I decided to make a plethora of desserts. I already shared with you all my recipe for the Cherry Lavender Cheesecake, so I couldn’t just let these little guys go unappreciated!

If you’re new to baking and you’re feeling intimidated by any of my cheesecakes or other desserts, these Chocolate PB Bites are a great dessert to start with. Not only are they incredibly easy to make, but they are soo so so delicious and save well if you just want to keep some sweet, bite-size treats around the house. I personally can’t just eat one at a time, so I tend to only make them for parties or when I know someone will help me eat them, but if you’re the type of person who just needs a bite of sweet, then these are perfect!

For such an easy recipe, these bite sized treats are very versatile looking and are easy to make fancy to impress your family and friends. The drizzled look is much more modern and “edgy”, while the full chocolate dip is just asking you to take a bite (can you tell I’m in a weird mood today?). But seriously, get creative with these! They will be delicious no matter how they look.

And just to give you an idea of what eating one is like… it tastes like a chocolate dipped banana and a Reese’s Peanut Butter Cup had a lot of cute little banana sandwich babies. It’s super important to let these cuties defrost for a few minutes before serving so the banana isn’t too icy but the chocolate is still somewhat frozen.

Chocolate PB Bites

Delicious, guilt-free, bite-sized treats
Ingredients
  • 4 Bananas
  • ¼ cup organic peanut butter
  • ¼ cup semi sweet chocolate chips
  • 2-3 TBSP coconut flakes
  • Toothpicks
Instructions
  1. Peel and slice bananas into half inch slices (the number of bananas you use depends on how many you want to make).
  2. Place a large piece of wax paper or parchment paper onto a cookie sheet. Lay half of the banana slices on the sheet.
  3. Using a small spoon, spread 1 teaspoon of peanut butter on each banana slice, and top with a second banana slice. Insert a toothpick into each banana/PB "sandwich" and freeze for 20 minutes.
  4. Meanwhile, heat up a cup of semi-sweet chocolate chips in a pot over low-medium heat. Stir constantly as the chocolate melts, and remove from heat once melted. Alternatively, melt the chocolate in a bowl in the microwave, making sure to constantly stir it.
  5. Option to either dip the bananas in chocolate or drizzle chocolate on (both are pictured). Then either roll in a bowl of coconut flakes, or sprinkle flakes on. Freeze for at least an hour.. Remove from the freezer 5 minutes before serving.
 

Just remember, these little morsels are so deliciously good that they are hard not to eat all of while you’re making. You can always turn this into a recipe for one, using 1 banana, 2 tablespoons of peanut butter and 2 tablespoons chocolate. There are so many different ways you can make this, whether you choose to make a raw chocolate sauce, use dark chocolate, or even try milk chocolate.

The main thing is to start making desserts, instead of buying them out. That’s the first step in the right direction to pleasing your sweet tooth and keeping up with a healthy diet.
