Coconut & Mango Overnight Oats

BREAKFAST

This is a wonderful way to have a delicious breakfast for those of you who don’t have time to make anything in the mornings. Make it night before and take to work with you, or just eat it as soon as you wake up. Plus it means no cooking any of the food so you retain all those wonderful vitamins, minerals , and enzymes that would otherwise get killed during the heating process.

WHAT YOU NEED

  • 2 tablespoons chia seeds
  • 1/4 cup of oats
  • 1/2 cup almond milk
  • 1/2 mango
  • a few pieces of fresh coconut
  • 1 teaspoon vanilla extract
  • Mason jar (optional)
  • Blender

DIRECTIONS

  1. In a blender, mix your vanilla, mango, coconut, and almond milk
  2. In a bowl, mason jar, or wine glass begin layering you (uncooked) oats, chia seeds and the mixture
  3. Cover and place in the fridge overnight
  4. Take out the next morning and your oats and chia seeds will be “cooked”
  5. Top with extra fruit, goji berries, cacao nibs, or left over coconut flakes/chunks
