Guilt-Free Chocolate Crepes
I have been making so many delicious recipes lately! Recently I’ve been taking a sweeter approach with the Anti-Aging Smoothie and Chocolate PB Bites… and this recipe is no exception. While all my recipes are healthy and guilt-free, you definitely shouldn’t make 5 in one day like I have been doing. I am seriously overloaded with sweet right now and you know what, I don’t feel bad about it at all! Today’s recipe is Guilt-Free Chocolate Crepes.
How delicious do those looks?!? The recipe is super easy and is just one serving! The eggs and oat flour make this recipe a high-protein and energy-boosting breakfast option, and if you aren’t a fan of chocolate, they can be topped with anything. Usually I put some frozen berries in a dish and microwave for 30 seconds until they are soft and juicy to pour on top of my crepes. The day I made this though, I was craving chocolate so I decided to indulge a bit.
Now don’t get me wrong, the chocolate isn’t bad for you (I mean, it’s not GOOD for you, but it isn’t bad either). If you want to start your day with a little chocolate, by all means you should feed that craving. Moderation is key! Your goal should be to pour enough chocolate on the crepes for the flavor without drenching it in chocolate and giving yourself a sugar high / crash. I also sprinkled a little Xylitol on top, which is my favorite zero calorie sweetener. The Xylitol helps add sweetness on top of the crepes so that you can use less chocolate.
Unfortunately, I clearly don’t know how to use moderation myself. I MAYBE got a little carried away with the chocolate sauce in that last picture… but it just looks so pretty! And yes, I did eat it. And no, I didn’t feel great after, but I had also tried 2 different crepe recipes before I settled on this one and I ate every single one. This is why I can’t be trusted in a kitchen with chocolate.
It’s important to note that you probably won’t need the entire amount of chocolate listed in there recipe. I recommend using half of the chocolate and saving the other half for later. The reason I list 1/4 cup in the recipe is because it’s easier to pour this amount since so much of it will get stuck on the cup.
So I hope you enjoy this recipe!! It’s a personal favorite of mine, and it’s so simple that you can really get creative with toppings. Let me know what you all end up doing with your crepes!!
- 1 cup oat flour
- 2 large whole eggs
- 1 TBSP coconut nectar
- ¼ tsp vanilla
- ¼ cup water
- 1 TBSP coconut oil
- ¼ cup semi-sweet chocolate chips
- Blend all crepe ingredients except coconut oil
- Heat pan with coconut oil. Pour about ¼ cup of batter onto the center of the pan and spread around pan so crepes are very thin. Cook for 2 minutes or until bottom is brown and then flip. Repeat with each crepe
- Meanwhile, melt chocolate chips in a cup either in the microwave or in a small pot over low heat.
- Add crepes to plate. Drizzle with chocolate sauce
- Optional: top with sugar of your choice (I used Xylitol), coconut flakes, blueberries or other fruit
