This mouth watering dish will keep you satisfied all evening long. As well as providing you with an abundance of healthy fats, proteins, carbohydrates and vitamins, what’s not to love!
- 1 cup mixed cherry tomatoes (red and orange), sliced in halves
- 1/4 cup chickpeas, washed and drained
- 1/4 cup chopped cucumber
- 1/4 cup feta cheese, crumbled
- 1/4 cup cooked quinoa
- Handful of chopped mint
- Handful of chopped parsley
- Fresh lemon juice
- Olive oil
- Sea salt and black pepper
- In a large bowl mix all the ingredients together, drizzle with lemon juice, olive oil and season with salt and pepper.
