Moroccan Salad

DINNER

This mouth watering dish will keep you satisfied all evening long. As well as providing you with an abundance of healthy fats, proteins, carbohydrates and vitamins, what’s not to love!

INGREDIENTS:

  • 1 cup mixed cherry tomatoes (red and orange), sliced in halves
  • 1/4 cup chickpeas, washed and drained
  • 1/4 cup chopped cucumber
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup cooked quinoa
  • Handful of chopped mint
  • Handful of chopped parsley
  • Fresh lemon juice
  • Olive oil
  • Sea salt and black pepper

METHOD:

  1. In a large bowl mix all the ingredients together, drizzle with lemon juice, olive oil and season with salt and pepper.
