Protein Packed Salad


I love salads. Now don’t get me wrong, I’m actually quite a salad snob and refuse to eat a salad if it’s a bowl of lettuce and one slice of cucumber that I’m charged $10 for. Nope, that does not make me happy. What does make me happy though is when I get to share incredibly easy recipes like this protein packed salad, because it will help you to see the results you want and leaves you feeling great after eating it. Win win, right?!

This video was filmed a while ago after I finished the detox in December, however it’s never too late to share. I had a bunch of the ingredients still in my fridge and so I decided to share how easy it is to make lunch. You don’t need to count calories, macros, or points. You just add a ton of colors and any protein source you want. Ta-da! Easy!

Protein Packed Salad


  • 1 cup spinach or any lettuce of your choice
  • 1 large carrot, chopped
  • 1/4 red & orange pepper, chopped
  • 1 small raw beet, chopped
  • 1 inch chunk purple cabbage, shredded
  • Small handful cilantro, chopped
  • 1/2 avocado, chopped
  • 1 hard boiled egg, sliced
  • 1/2 cup cooked quinoa

The key to this is pre-making your hard boiled eggs and quinoa. Once those are done and in the fridge for the week, just add to the rest of the ingredients. The great thing about this salad is you can swap out any ingredients. So if you don’t like cabbage, add tomatoes. Don’t want egg, add chicken.

  • 1 tsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp honey
  • 1/2 lemon, juiced
  • 1/4 tsp of each: turmeric, black pepper, cayenne

Mix all ingredients together. If you don’t like the taste, try adding a tiny pinch of salt, or a bit more honey. The goal here is to create something that you love that still contains superfood ingredients.
