Simply Sensational Kale Salad

Today was one of those days I was craving kale. Weird craving I know. Kale is one of those things that starts off being pretty bland, weird texture and not the most tasty of creatures. However, if you add the right things and give it a little massage, it will become a whole new piece of kale! Kale is one of those things that we all need more of in our diet. It has recently become a superfood and with good reason. It is super low in calorie- one cup has 36 calories! Now while I don’t promote calorie counting I will point out that kale boasts a very high fiber intake (5g for one cup), which is 1/5 of your daily dietary fiber needs. Kale has 0 grams of fat, is rich in iron, and has tons of nutrients and minerals to help keep  you healthy. I always recommend adding one cup of kale into your smoothies as this is the simplest way to have the greens throughout the day.

INGREDIENTS

  • 1 bunch dinosaur kale (or prepackaged/pre-cut kale)
  • 1 avocado
  • 2 lemons
  • 1 raw beetroot
  • 1 small cucumber
  • handful cilantro
  • 1 tbsp tahini
  • pinch salt & pepper

DIRECTIONS

  1. If you are using fresh kale, grab the stem and pull away from you with the other hand. This will strip the leaves and leave the stem, which you throw out. If you have pre-cut kale add to you bowl. Cut your avocado in half, discard your seed and add both halves into the bowl with the kale. Next chop your lemon and half and squeeze the juice into the bowl. Add your salt and pepper and tahini.
  2. Now it’s time to get dirty. Using your hands, mix everything in the bowl together, massaging the kale leaves with the avocado and incorporating all the other ingredients into the mixture.
  3. Once your kale is fully combined, add your peeled and chopped beetroot, cucumber and chopped cilantro. Mix well.

This is your base salad and you can either use this as a side dish or add some chicken, beef, fish, or tofu to create a meal. I chose to add hemp seeds, cacao nibs and almonds for a bit more texture (crunch) and protein.photo 2
