The summer weather has finally arrived! There are few things in life I love more than gorgeous summer sunny days. After spending the morning on a hike or laying out by the beach, I always find myself craving a delicious and refreshingly clean lunch. These Summer Spring Rolls are the perfect fix!

Despite being bikini season, Summer can also have a lot of temptations. From Summer BBQs, to stops at the local ice cream shoppe, it can be be easy to get off track during the summer. Reach instead for all the beautiful colors of summer produce! Fruits and veggies can help you stay hydrated in the heat and feed your body with the nutrients it craves. Remember to count colors, not calories. The rainbow of amazing produce in these spring rolls will have your bikini body thanking you later.

These bad boys are also a great substitute if you find yourself craving an unhealthy wrap or burrito. They are fun to eat and just as filling, but without leaving you feeling heavy. The healthy fats in the avocado help to hold you over until dinner. And it’s avocado, so it’s obviously amazing. Need I say more?

Summer Spring Rolls

Ingredients
  • 3 rice paper rolls
  • 3 iceberg lettuce leaves
  • 1 large carrot
  • small chunk of cucumber
  • ½ avocado
  • ¼ red pepper
  • small bunch of cilantro
Instructions
  1. Chop vegetables into thin strips, julienning the avocado and all of the vegetables, except the iceberg lettuce.
  2. Boil water in a large pan.
  3. Place one rice paper wrap in the water, pulling it out after a few seconds (it should be soft).
  4. Be careful to lay it on a flat surface without creating folds. Place one lettuce leaf in center. Put a thin line of carrots (around 5 pieces if sliced thin), 2 slices avocado, cabbage, cucumber and pepper in the center.
  5. Grab one side and fold over the center, wrapping the veggies underneath. Fold the sides in and keep wrapping. Chop in half and dip in your desired sauce.
