Raw Chia Seed Pudding/Smoothie

Try this Raw Chia Seed Pudding/Smoothie if you are looking for an energizing and satisfying breakfast or snack.
  • 1 cup strawberries
  • 1 banana
  • 1 small chunk ginger
  • ¼ cup coconut milk
  • ¼ cup water
  • 1 tbsp chia seeds
  • 1 tsp honey
  • ice
  1. Mix together chia seeds, honey and coconut milk in a separate glass and allow to sit for 4 hours, or overnight for optimal results
  2. Remove stems from strawberries and set 2-3 to the side. Add remaining strawberries into your blender along with ginger, banana, ice, and water. Blend until smooth
  3. Take your chia pudding and either keep it in the original glass or transfer to a new glass. Slice your remaining 2-3 strawberries thinly and press them against the sides of your glass or jar. They will stick easily, just make sure to press them firmly until stuck.
  4. Pour your smoothie into the glass slowly. Top with chopped cacao beans or nibs, extra strawberries and fresh mint, and enjoy!
